Chocolate Peanut-Butter Bars

Once again, I have a cake mix recipe for you. It’s almost embarassing how much I love cake mixes. Especially since I can’t remember the last time I baked an actual cake using a cake mix…

Start by greasing a 9″square pan. I used a 7×11″ pan with the same results. If you want to make the recipe go further, use a 9×13″ pan. The bars will be a bit thinner, but it will still work just fine.

Preheat the oven to 350 degrees. I always get frustrated when that’s the first step in a recipe, especially when the recipe takes half an hour to put together. Then you have a hot oven sitting there for 25 minutes while you get everything together. This recipe is so quick, it really will be ready to go in once your oven is hot!!

Combine:

  • 1 yellow cake mix
  • 2 eggs
  • 1/3 C vegetable oil
  • 3/4 C peanut butter (crunchy or smooth is fine)

Mix in:

  • 2 C chocolate chips (I always use jumbo bitter-sweet chips, but use whatever you have)

Press the dough into the pan and bake for 15-20 minutes. The bars will still be soft like a just-baked cookie, but they’ll set a bit as they cool.
